Traditional Romanian Bean Soup with Smoked Meat

A hearty and flavorful Romanian bean soup made with white beans, smoked pork, and vegetables, slow-cooked for a rich, comforting taste.

Instructions

  1. Soak the dried beans in cold water overnight. Drain and rinse well.
  2. Place the beans in a large pot with fresh water and bring to a boil. Boil for 10 minutes, then discard the water.
  3. Add 2 liters of fresh water, the smoked pork, and bay leaves. Simmer over low heat for about 90 minutes, until the beans are tender.
  4. In a pan, heat the oil and sauté the onion, carrots, and bell pepper until softened.
  5. Stir in the tomato paste and thyme, then add the mixture to the soup pot.
  6. Continue cooking for another 20–30 minutes, allowing the flavors to blend.
  7. Season with salt and black pepper to taste.
  8. Serve hot, garnished with fresh parsley and accompanied by pickled hot peppers if desired.
