Traditional Romanian Bean Soup with Smoked Meat

Instructions
- Soak the dried beans in cold water overnight. Drain and rinse well.
- Place the beans in a large pot with fresh water and bring to a boil. Boil for 10 minutes, then discard the water.
- Add 2 liters of fresh water, the smoked pork, and bay leaves. Simmer over low heat for about 90 minutes, until the beans are tender.
- In a pan, heat the oil and sauté the onion, carrots, and bell pepper until softened.
- Stir in the tomato paste and thyme, then add the mixture to the soup pot.
- Continue cooking for another 20–30 minutes, allowing the flavors to blend.
- Season with salt and black pepper to taste.
- Serve hot, garnished with fresh parsley and accompanied by pickled hot peppers if desired.
