Ingredients

Egg
large
2 units
100 grams
300 ml
Sunflower Oil
or vegetable oil
1 tbsp
Lemon Wedges
optional, for serving
3 wedges
Caster Sugar
optional, for serving
5 grams

Instructions

  1. In a dish or big jug, combine 100g plain flour, 2 large eggs, 300ml milk, 1 tbsp sunflower or vegetable oil, and a pinch of salt. Whisk to form a homogeneous batter. This should have a similar consistency to single cream.
  2. Set aside 30 minutes to relax if you have time, or begin cooking immediately.
  3. Place a medium frying pan or crêpe pan over medium heat and carefully clean with oiled kitchen paper.
  4. When hot, cook your pancakes for 1 minute on each side, or until golden, using about half a ladleful of batter per pancake. Keep them heated in a low oven while you prepare the remainder.
  5. Serve with lemon slices, caster sugar, or your favorite filling. Once cold, place the pancakes between baking parchment, wrap in cling film, and freeze for up to two months.
